HOMEMADE PEPPERMINT PATTIES

A recipe for simple, delicious peppermint patties.

Let us preface this post by saying we are not food bloggers, nor do we develop recipes, but we do LOVE to cook and bake! And with the holiday season in full swing, we are baking up a storm! Every year we like to try something new and this year we decided on homemade peppermint patties. The combination of mint and chocolate is a very festive flavour and delicious to enjoy with a nice holiday beverage in the evening.

What you’ll need:

  • 2 1/4 cups of icing sugar
  • 2 Tbsp butter
  • 2 Tsp peppermint extract
  • 1 1/2 cups of semi-sweet chocolate chips
  • 2 Tbsp cream

You’ll begin by mixing the icing sugar, butter, peppermint extract and cream until the mixture becomes firm. If the filling is very sticky, it is recommended to add more icing sugar and tablespoon at a time until no longer sticky to touch. If the mixture is too sticky, it will be difficult to work with.

Once ready, shape the filling into a log shape and wrap in plastic wrap. Then place in the refrigerator to chill for 45 minutes to an hour.

When the filling is almost done chilling, prepare the chocolate. We melted the chocolate chips in the microwave, stopping to stir every 30 seconds, but for a better consistency, we recommend melting the chocolate using a double boiler. If you find your chocolate mixture a little thick, you can add a very small amount of butter, canola oil or shortening.

Remove the filling from the fridge, and cut into 1/4 inch thick slices. If you would like them thicker, just note you’ll end up with less patties. Now instead of dipping the patties into the melted chocolate, we found it best to brush the patties with the chocolate on one side, chill and repeat on the other side. The filling will begin to get warm and sticky, so you may want to work with half of the batch at a time. Dipping the patties into the chocolate is difficult unless they are very cold, and we found by brushing the patties we were able to control the amount of chocolate and consistency better. You can also decorate these patties by adding sprinkles, nuts, or crushed candy cane to the top chocolate layer before placing in the freezer to chill.

After you’ve covered them in their final layer of chocolate, you can pop them in the freezer to allow the chocolate to harden completely. Once hardened, store in a sealed container in either the refrigerator or freezer and enjoy at your leisure. We hope you enjoy these as much as we do!
